Ghost pilots

G'day everbody,
One of the things I find disappointing is that all flight sims (with the exception of Lock-On) and add on aircraft have moving controls such as rudder pedals,throttles,joysticks etc. but no limbs. If one was flying an aircraft and glanced down at the controls one would see hands, arm & legs.
Many of the simulators are getting very good with graphics, reflections in the glass, shadows and light reflections & sounds, all adding to the immersion only spoilt by controls moving with out limbs controlling them. External views all show pilots, co-pilots but internal views - Ghost pilots.
It seems to me a pity, that no add-on aircraft producers have considered the extra immersion value this would add.
